Ingredients
1 ⅓ cups oats (rolled or quick cooking)
⅓ cup all-purpose flour
1 pinch salt
¼ tsp baking powder
¼ tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla
6 tbsp butter or margarine (room temperature; unsalted is best)
¾ cup cup brown sugar
1 egg
¾ cup raisins
⅓ cup another add-in like chocolate chips, nuts, flax seeds, etc. (optional)
Directions
1Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
2Beat the butter and brown sugar until fluffed up, then add the egg, cinnamon and vanilla and beat until smooth.
3In a separate bowl, mix the oats, raisins, add-ins, and flour with baking powder and baking soda and pinch of salt.
4Using a rubber spatula, fold the oat mixture into the egg mixture. The dough will be a little crumbly.
5Using a tablespoon measuring spoon or oiled hands, pick up golf ball size pieces of the dough and place them on the cookie sheet about 1/2 inch apart.
6Bake the cookies for about 13 minutes. Remove them when the center is still soft but the edges have set.
7Cool on the baking sheet for 2 minutes before attempting to remove them.
