Mexican meatball soup right from your instant pot! A family favorite ready in no time.
Ingredients
1 ½ lbs super lean ground beef
5 Roma tomatoes, diced
1 onion, diced
2 green chilies, diced
½ bulb of garlic, minced
½ large can of tomato sauce
1 can of tomato paste
1 can of hot Rotel
½ box of beef broth
1 bunch of cilantro
Directions

Make meatballs with the ground beef (can add breadcrumbs/egg/cilantro/garlic other seasonings if desired).

Fry the meatballs so they’re partially cooked.

Add tomatoes, onions, chilies, tomato sauce, tomato paste, Rotel, broth, and meatballs to Instant Pot.

If the liquid doesn’t seem soupy enough, add more broth or water.

Set Instant Pot to manual pressure for 40 minutes.

Season with remaining cilantro and serve.
